My favourite lunch Masala Bhindi & Cucumber Raita. Like all other dry bhindi recipes, even this bhindi masala is best served with soft phulka or chapati or paratha or naan and cucumber raita or veg raita by side. They also go well as a side dish with some dal-rice or any rice-curry combo. Bhindi masala also can be packed in tiffin box or lunch box with roti or paratha.

- Prepare 500 gm of bhindi(washed and cut into small pieces).
- You need 3 of onions (chopped).
- It's 2 of tomatoes (chopped).
- You need 1 tbsp of ginger garlic paste.
- Prepare 1 of green chilli (chopped).
- It's 4 tbsp of oil.
- Prepare 1 tsp of cumin seeds.
- Prepare 1 tsp of amchur powder.
- It's 2 tsp of coriander powder.
- It's 1/2 tsb of turmeric powder.
- You need 1 tsp of salt or to taste.
- You need 1/4 tsp of red chilli powder.
- It's 1/2 tsp of garam masala.
- It's 1 tsp of lemon juice.
- Prepare 2 tbsp of Fresh coriander.

- You need 2 of cucumbers (peeled and grated).
- It's 2 cups of fresh curd.
- It's 1/2 tsp of dry pudina leaves.
- Prepare 1/2 tsp of cumin powder.
- Prepare 1/4 tsp of black salt.
- You need 1/2 tsp of red chilli powder.
- You need of Salt(to taste).
- You need 2 tbsp of Fresh coriander.

- Bhindi preparation—-Heat 2 tbsp oil in a pan add the chopped bhindi. Sauté it to in medium flame for 10 minutes..
- Transfer bhindi into a bowl.Now in the same pan add 2 tbsp oil heat it. Add cumin seeds,green chilli, onions one by one. Fry it until onions turn light brown..
- Then add ginger garlic paste cook it for 1 minute.Add tomatoes and salt,cook it for 1-4 minutes..
- Now add all the dry masala(spices)saute it well..
- Now add the fried bhindi, mix & cook it for 2-3 minutes on medium flame. Add lemon juice,coriander leavesand turn off the flame..
- Masala bhindi is ready.Serve with roti/ chawal/paratha..

Okra or bhindi as it's called in Hindi is a very popular vegetable in India. Heat oil in a pan /kadai, add cumin seeds, when it splutters, add onions, green chilli and saute until onions turn golden brown. Then add chopped tomatoes, turmeric powder, chilli powder, coriander powder, cumin powder, garam masala powder, salt needed and cook until tomatoes become mushy. Bhindi Masala is a semi gravy side dish from Punjab made with sautéed bhindi (okra) cooked in a spicy masala that goes very well with chapatis, rotis or phulka. This is one of my favorite recipe using bhindi as you cannot feel the sliminess of the vegetable in any way.
