Kaman Dhokla Remember those fluffy yellow bites with sweet & sour flavour in them? Well, that's definitely Dhokla, a popular Gujarati dish that can be enjoyed any time of the day. Traditionally, this delicacy is made with besan or chickpea flour, which is known as Khaman in Gujarati. You can cook Kaman Dhokla using 18 ingredients and 4 steps. Here is how you cook it.

Ingredients of Kaman Dhokla

  1. It's of besan.
  2. It's of citric acid.
  3. It's of salt.
  4. It's of powdered sugar.
  5. You need of hing.
  6. It's of turmeric powder.
  7. It's of finely chopped Green chillies.
  8. It's of &1/2 cup water.
  9. Prepare of oil.
  10. It's of baking soda.
  11. You need of hing for tempering.
  12. It's of mustard seeds.
  13. It's of slit green chillies.
  14. Prepare of curry leaves.
  15. You need of water for tempering.
  16. It's of sugar.
  17. Prepare of salt.
  18. Prepare of lemon juice.

That's the sole reason, this recipe is also called Khaman Dhokla. Khaman also known as khaman dhokla is a savory cake made with a batter of gram flour and a leavening agent. The batter is steamed to get a fluffy and soft cake. It is topped with a flavourful tempering made with mustard, green chilies, sesame seeds, hing and curry leaves.

Kaman Dhokla instructions

  1. First in a large bowl siteve chickpea flour then add all the dry ingredients then mix it very well then add first add 1/2 cup water again mix it very well then again add 1/2 cup water again give it a good mix so that there should be no lums you can use a whisker for this process.
  2. Then add oil again mix it very well,again add more 1/2 cup water keep mixing the batter for about 5 minutes,now let the batter rest for about 15 minutes,in the meanwhile prepare the steamer then after 15 minutes add baking soda into the batter.
  3. Then mix the batter very very well then immediately put the batter into the greased baking tray then put the tray into the kadhai or steamer in a medium flame cover it with a lid for about 30 minutes.
  4. In the meanwhile prepare tadka for this heat oil in pan then add pinch of hing,mustard seeds,slit green chilles,curry leaves,water,sugar,salt and lemon juice then turn off the heat now after 30 min turn off the gas of the steamer after 5 minutes open the lid take out the dhokla on the plate cut them into pieces then put warm tadka over the dhokla and is ready to serve.....

Khaman is a variation of the Rava Dhokla recipe I shared before. The primary ingredients in Khaman is gram flour, while for Rava Dhokla the main ingredient is semolina. Khaman is also called as Besan Dhokla or Yellow Dhokla due to it's yellow color from gram flour. Traditionally Khaman is steamed in a stovetop pressure cooker without the whistle. Khaman Dhokla is a soft and spongy Gujarati snack.
